- 1 ½ tbsp full-fat sour cream, room temp
- 5 tbsp pure canned pumpkin
- 1 tbsp apple juice (or orange juice/water)
- 3 tbsp granulated sugar
- 2 tbsp light brown sugar
- 1 large egg yolk, room temp
- ½ tsp vanilla extract
- ½ cup fresh apple, diced (reserve 1 ½ tbsp for streusel)
- ½ cup + 1 tbsp all-purpose flour
- ¼ tsp baking soda
- ⅛ tsp salt
- ¾ tsp pumpkin pie spice
Step-by-Step Instructions

In a small bowl, combine flour, butter, sugars, salt, and cinnamon. Use your fingers or a fork to work in the butter until crumbly. Stir in diced apples, then refrigerate until ready. - Prepare Muffin Batter 🍏
